Green Eggs and Ham

It’s Dr. Seuss’ birthday! So celebrate March 2nd with Green Eggs and Ham. Pesto is the secret green ingredient and it gives the eggs a nice zip. We promise your kids will eat them in the rain or on a train. In a house and even with a (pet) mouse.

Prep time: 5 minutes
Cook time: 10 minutes

  • 1 ham steak for every 4 people
  • 2 teaspoons butter
  • 2 eggs per person
  • 1 tablespoon refrigerated, prepared pesto for every 2 eggs


1. Gently brown ham steak in a non-stick skillet with 1 teaspoon of butter. Once it’s a little crispy, set it aside and wipe out the skillet.

2. Beat eggs and pesto together. Add second teaspoon of butter and over low heat, gently scramble the eggs.

Complete the meal: With buttered toast and a green vegetable—peas, broccoli, beans—bonus points if you can recite the end of the book and have Sam I am give the veggies his endorsement.
